mama q’s restaurant on johns island south carolina features amazing ridgerunner bar be que and tex mex cuisine along with other americana type dishes. located in the charleston south carolina area on maybank highway in the builders 1 resource plaza and island self storage. it is across the street from the fat hen near james island, kiawah island and seabrook island. the pulled pork is generously rubbed with the special Q dust and slowly smoked over a blend of different woods. the wings are amazing and come in hot, hotter, and crazy hot. the roast beef quesadilla is my favorite item on the menu. the burgers are fab. tacos are amazing there are even some insane items that they make there but don’t have on the menu. just ask and you will be amazed. i have not had anything there that i did not think was absolutely amazing. amazing beer selection. great vibe. great staff. good times. also be sure to pick up your low country high rollers tickets there as well.

Smoked BBQ Rib Roast and Tex-Mex Smoked Sausages

Hickory and Bourbon Smoked Rib Roast

Ingredients

15 pounds charcoal briquets
2 pounds hickory wood chips
1 cup bourbon whiskey
1 (4 pound) standing rib roast, bone in
1/2 cup steak seasoning

Preparation

Start at least 10 pounds of the charcoal in a torpedo style smoker. You need a fairly hot fire. Fill the secondary pan with cold water, and wait for the coals to turn white. Soak hickory chips in bourbon with enough water to cover. Rub the roast liberally with steak seasoning, being sure to coat all surfaces.

When the coals are ready, place the roast on the top grate. Throw a few handfuls of soaked hickory chips onto the fire, and close the lid. Check the fire every 45 minutes or so, adding more charcoal as needed to keep the fire hot. Every time you check the fire, add more wood chips.

Cook for 8 to 10 hours, or to your desired doneness. Use a meat thermometer to check the roast. The meat tastes best when rare: 145 degrees F (65 degrees C), but cook to your liking.

Tex-Mex Smoked Sausages and Rice

Ingredients

1 (14 ounce) package Hillshire Farm® Hardwood Chicken Smoked Sausage, cut into 1/2-inch thick slices
1 large zucchini, sliced
2 cups frozen corn with red and green bell peppers and onion, thawed, drained
1 (15 ounce) can black beans, drained, rinsed
2 cups cooked white rice
1/2 cup salsa
1 teaspoon chili powder
1 cup shredded Mexican blend cheese

Preparation

Spray a large non-stick skillet with no-stick cooking spray. Add sausage, zucchini and corn mixture; cook and stir over medium-high heat for 8 minutes or until vegetables are cooked and sausage is heated through.

Stir in black beans, rice, salsa and chili powder. Cook and stir for 5 minutes or until heated through.

Sprinkle with cheese and cilantro (if desired); just before serving.

Cheap Beach House Rentals And Tex-Mex Foods In Trujillo, Honduras

Cheap Beach House Rentals – Stayed at Banana Beach for 3 weeks to get a tranquil, romantic holiday and but wound up being enticed into far more action than had planned! One awesome instance of this was the Tex-Mex BBQ. I was blown away at the reality that the two of us managed to get such a modestly priced seashore house accommodation in the Carribbean

The proprietor Rand is a (former) Texan so IT did not shock me much that Mexican influenced featured so prominently on the food at ‘The Mystic’, the resort’s bar / restaurant. Rand had a another bar in Texas, which means that when it comes to Mexican influenced he knows his stuff. Just what did shock me was how really good the meals was. As much as I enjoy Honduras and its cooking, restaurants here do not do the best variants of Mexican, or Tex-Mex Meals. Frequently it is better just to keep to the regional cuisine, seafood and food having a Caribbean influence. One of the issues typically is that Hondurans for an unknown reason often name random food with Mexican tradittional names, as a result when a person order an enchilada (by way of example) you actually come out having a toscada, which could be a little disappointing.

Banana Beach is actually an thankful exception to that, because of both Rand’s experiences within the hospitality industry in Dallas as well as the fantastic resident chief cook Juergen. On the standard menu this means if you order dishes you actually know what you will be getting! Much more than just this, Juergen shies away from the very deep frying everything, that’s the normal treatment of Tex Mex cuisine in Honduras. Therefore as you are able to imagine from my description of the standard menu, the Mexican inspired BBQs end up one step beyond.

Trujillo Honduras Beach

As it’s a Mexican influenced event, the meat have to take precedence and it is finger licking great. We have no concept just what Juergen uses in the marinades and sauces but it is flawless. I also do not know how they discovered nicely butchered pork in Honduras. The pork around here is usually pretty hard by North American standard, but that’s the way they like it. The three bean salads were yet another favorite. It was a great accompaniment for the shocking volume of various meats I had on my plate! With true Mexican Inspired style they do not overcome the meat with flavor, just a touch of it, and that is just how I prefer it!

Apart from the food, the company ended up being fantastic as well. Locals and gringos (just about all north Americans and Europeans are gringos in Trujillo, Honduras!) came from a distance away to join on the Barbecue fun. We believe the fact that they really possess a full beach bar, which usually a lot of places inside Honduras don’t, along with one of the best locations on Trujillo Bay almost certainly helped this along! From 4pm the party actually got started so we all carried on drinking, dancing and generally having a good time until really quite late in the day time. I had to remind myself in the morning that Tex-Mex Barbecue does not demand you must imbibe too much moonshine, despite what Rand says!

So, should you be looking for cheap beach house rentals inside of a exquisite secluded area, with a lot of remarkable food, have a look at Banana Beach as a holiday prospect!

How To Make A Quick And Easy Tex-Mex Casserole

This recipe for Tex-Mex Made Easy Dish is a great recipe on a busy day.  IT is table ready in a half hour, tasty, and makes enough to serve 8 to 10.  Serve with your choice: a salad, sour cream, salsa, whole-kernel corn, tortillas, etc. to round out the meal.  Too busy to make a dessert?  Serve ice cream with some cinnamon-flavored cookies.

TEX-MEX MADE EASY DISH

4 cups water
1 cup chopped onion
1 cup chopped green bell pepper
1/4 tsp salt
1/4 tsp pepper
1 pkg (1 1/4-oz) taco seasoning mix, divided
4 cups uncooked instant rice
2 cans (8-oz each) no-salt added tomato sauce
1 lb lean ground beef
1 can (16-oz) fat-free refried beans
1 pkg (8-oz) reduced-fat shredded Mexican blend cheese

Preheat oven to 350 degrees.

In a large saucepan, combine the water, chopped onion, chopped bell pepper, salt, and pepper along with half the packet of taco seasoning mix. Bring the mixture to a boil over medium-high heat. Remove from the heat. Stir in the rice and allow to stand, covered, for 5 minutes. Stir in the tomato sauce.

Meanwhile, cook the ground beef in a large nonstick skillet over medium-high heat until thoroughly browned, stirring to crumble. Drain and rinse with hot water. Return to the skillet and stirring in the remaining half of the taco seasoning mix.

Spray a 9 x 13-inch baking pan or dish with nonstick cooking spray. Spread half the rice mixture into the bottom of the pan or dish. Spread the beans evenly over the rice mixture. Top rice with the beef mixture and sprinkle beef with half the package of cheese. Spread remaining rice mixture over the cheese; top with remaining cheese. Bake at 350 degrees for 10 to 15 minutes until cheese melts and casserole is bubbly.

Enjoy!

Serve with salsa, sour cream or other condiments, if desired.
