I need help from some true Mexican, I need recipes and instructions on good Mexican food REAL?!?

I know how to cook American food, as roast and meatloaf, and I know some Mexican dishes, but when my boyfriend and i are moving in generally are going to want real Mexican food, like her mother did for him. So I need help. nobody told me. I do not like my mother. Do not let her. So I can give some instructions and recipes.

I agree with responses from others if you can find recipes from her mother, who would be true and just what he likes. If you do not live near IT or have a close relationship with her, then Rick Bayless cookbook has a wonderful authentic regional Mexican cuisine called the heart of Mexico. It is not Tex-Mex is authentic Mexican. You can try Amazon.com check, a copy of the book cheaper than going to bookstores and pay full price. Hope that helps.

You should try these easy to make beans. You will not regret not. Enchilada Sauce: 12-20 seeds dried red chiles in New Mexico (hot) or c. 4-6 New Mexico soup powder or 3 cloves of America Chile garlic, minced 1 medium onion, quartered 2 (12 oz) tomato sauce, salt and pepper to taste 12 corn tortillas stacked Regular Enchiladas 1 cup corn or canola oil 1 large onion, chopped 4 cups shredded cheddar cheese 3 c. 4 tablespoons butter, green onions, diced 1 3 1 oz / 2 sliced black olives 1 cup shredded lettuce 1 avocado, chopped Remove stems and seeds from peppers. In a medium saucepan, simmer chiles in 3 / 4 cup of water for ten minutes or until tender. Puree in food processor with the garlic and onion (If using chili powder, add all ingredients including tomato sauce and half a glass of water in food processor.) Return to the saucepan, add the tomato sauce, salt and pepper. Simmer for 20 minutes to an hour. Heat oil in a small saucepan. Fry each tortilla until slightly crisp. Dip each tortilla in enchilada sauce to cover lightly enough. After immersion in the first four tortillas, place them side by side in a large dish. Sprinkle a spoonful of onion and / 4 cup cheese. Fry the tortillas next dip in the sauce and ask about the first tortilla and filling. Sprinkle over the onion and cheese. Fry, diving and lying on the third and last of each tortilla stack. Sprinkle remaining cheese on top of each pile. Garnish with chopped green onion, olives, lettuce and avocado into cubes. Chivichanga 20 flour tortillas 16 oz 7 cups chopped cooked chicken sauce 1 small onion, minced 2-2 1 / 2 c. tea. Ground cumin 1 1 / 2 c. tea. 1 teaspoon teaspoon dried oregano. Salt 3 cups shredded cheddar cheese Garnish: guacamole, sour cream, lettuce and diced tomato. Mix 1 1 / 2 cups sauce and chicken, onion, cumin, oregano and salt in the ingredients in a Dutch oven, and cook over medium-low heat, stirring often, 25 minutes or until most of liquid has evaporated. Pour 1 / 3 cup mixture down center of each tortilla, top with 2 tablespoons cheese. Fold 2 sides of tortilla to enclose filling. Fold the top edges and bottom of the tortilla, with rectangles. Secure with toothpicks. Place folded side down, on greased baking sheets. Coat chimichangas with cooking spray vegetables. Bake at 425 degrees F for 8 minutes, turn and cook 5 minutes more. Remove picks, drizzle remaining sauce and desired toppings. Pinto Beans In a large saucepan Add 1 1 / 2 to 2 cups pinto beans, hock 10 to 12 cups of water, or bacon or bacon grease or a piece of fatty meat 3 bay leaves more hot, dry red chilies as Tepin, pico de gallo, Beijing or Tabasco Wash the beans and after picking up rocks and so on. Enjoy all this overnight, then slowly until IT boils.
