How to Make Simple, Quick and Easy Tex Mex Recipes; Refried Bean Soup and Amish Style Taco Squares

Busy cooks we have some tasty and easy recipes for you.  Whether you are a beginning cook, strapped for time, or just don’t like spending lots of time in the kitchen, you can serve your family these recipes with little fuss.  The Refried Bean Soup is a tasty and simple meal you can have on the table in 30 minutes.  Add a salad or relish tray, crackers, or warmed tortillas, and you have a meal.  The Amish-Style Taco Squares are a simple recipe using biscuit mix.  They are easy to put together and will be on the table in less than an hour, including baking time.  Again, add a salad or vegetable and you have a meal with little prep or clean-up time involved. 

 

REFRIED BEAN SOUP

 

1 can (28-oz) crushed tomatoes

1/2 cup chopped onion

1/2 tsp minced garlic

1 can (31-oz) refried beans

1 can (14.5-oz)chicken broth

1 tbsp minced fresh cilantro

5 corn tortillas, cut into 1/2-inch strips, optional

Sour cream, optional

Shredded Monterey Jack cheese, optional

 

In a large saucepan, bring the tomatoes, onion and garlic to a boil. Reduce the heat and simmer, uncovered, for 5 minutes. Stir in the refried beans, broth, and cilantro. Simmer the mixture for 15 minutes. Meanwhile, place tortilla strips on a cookie sheet. Bake at 350 degrees for for 12 to 15 minutes until crisp. Dip soup into bowls and top with crisp tortilla strips. Add sour cream and cheese over the crisp strips, if desired.

 

AMISH STYLE TACO SQUARES

 

This recipe is from an Old Order Amish lady that lives in Indiana. Her family travels by horse and buggy and they do not use electricity. The state of Indiana is one of the states with several Amish communities that still practice old-fashion Amish ways. And they are always good cooks!

 

2 cups biscuit mix

1/2 cup cold water

1 lb hamburger

1 tbsp chopped onion

1 green pepper

1 cup pizza sauce

1 pkg taco seasoning

1 cup sour cream

1 cup cheddar cheese, shredded

1/3 cup salad dressing

 

Combine the biscuit mix and the water. Stir the mixture with a fork until blended. Press the mixture into the bottom of a 9 x 13-inch baking pan. Bake at 375 degrees for about 8 minutes. Brown the hamburger with the onion and chopped green bell pepper. Add the taco seasoning and pizza sauce. Spoon the hamburger mixture over the warm crust. Combine the sour cream, cheese, and salad dressing. Spread the sour cream mixture over the meat mixture. Bake uncovered for 25 minutes or until golden brown and bubbly at 375 degrees.

Tex Mex Recipes for Diabetics

Two recipes for very tasty Tex Mex foods that are perfect for your family’s table.  And they are perfect for diabetics, too.  If you have diabetics in your family or among your guests there will be no reason to prepare a second entree for them.  Choose from Gold’s Chicken Enchilada Casserole or Chili Con Queso.  The Queso is great for sitting around in front of the TV watching football or other sport.

CHILE CON QUESO

1 lb ground beef

1 can kidney beans

1 can (8-oz) tomato sauce

1 tsp salt

1/2 cup chopped onion

1 can (16-oz) diced tomatoes, chili ready

chili powder to taste

dash of red pepper

shredded cheddar cheese

In a large deep skillet, brown the ground beef with the onion.  Pour mixture into a colander and drain well.  Rinse with hot water and drain.  Wipe excess drippings from pan with a paper towel.  Return mixture to skillet and add the beans, tomato sauce, salt, tomatoes, chili powder, and red pepper.  Stir to blend ingredients well.  Cover skillet and simmer for 30 minutes, stirring occasionally.  Top individual servings with the cheese and serve with baked tortilla chips.

GOLD’S CHICKEN ENCHILADA CASSEROLE

2 chicken breasts

2 tbsp vegetable oil

1 onion, chopped

1 can (28-oz) diced tomatoes with green chilies

1 can (8-oz) tomato sauce

1 pkg enchilada seasoning mix

1/2 tsp garlic powder

1/4 cup fresh chopped parsley

1 pkg (6-oz) corn tortillas

1 can (3.8-oz) sliced black olives

2 cups shredded Monterrey Jack cheese

Preheat oven to 350 degrees.  Cook chicken breast in a skillet with a small amount of water, until tender.  This takes about 15 minutes.  Allow chicken to cool before shredding.  Heat the oil in a large skillet and add the onion; saute until tender.  Add the tomatoes, tomato sauce, enchilada seasoning, garlic powder and parsley, stirring to blend together.  Bring to a boil, reduce heat to simmer, and cook, uncovered, for 15 minutes.  Place a third of the corn tortillas in the bottom of a 9 x 13 x 2-inch baking dish that has been lightly sprayed with nonstick cooking spray.  Pour a third of the meat mixture over the tortillas and layer with a third of the olives and a third of the cheese.  Repeat layers two more times, ending with cheese.

Bake uncovered for 30 to 40 minutes.

Yield: 8 servings of 1 cup each.  Per serving: 320 calories, 25 g carbs, 21 g protein

Smoked BBQ Rib Roast and Tex-Mex Smoked Sausages

Hickory and Bourbon Smoked Rib Roast

Ingredients

15 pounds charcoal briquets
2 pounds hickory wood chips
1 cup bourbon whiskey
1 (4 pound) standing rib roast, bone in
1/2 cup steak seasoning

Preparation

Start at least 10 pounds of the charcoal in a torpedo style smoker. You need a fairly hot fire. Fill the secondary pan with cold water, and wait for the coals to turn white. Soak hickory chips in bourbon with enough water to cover. Rub the roast liberally with steak seasoning, being sure to coat all surfaces.

When the coals are ready, place the roast on the top grate. Throw a few handfuls of soaked hickory chips onto the fire, and close the lid. Check the fire every 45 minutes or so, adding more charcoal as needed to keep the fire hot. Every time you check the fire, add more wood chips.

Cook for 8 to 10 hours, or to your desired doneness. Use a meat thermometer to check the roast. The meat tastes best when rare: 145 degrees F (65 degrees C), but cook to your liking.

Tex-Mex Smoked Sausages and Rice

Ingredients

1 (14 ounce) package Hillshire Farm® Hardwood Chicken Smoked Sausage, cut into 1/2-inch thick slices
1 large zucchini, sliced
2 cups frozen corn with red and green bell peppers and onion, thawed, drained
1 (15 ounce) can black beans, drained, rinsed
2 cups cooked white rice
1/2 cup salsa
1 teaspoon chili powder
1 cup shredded Mexican blend cheese

Preparation

Spray a large non-stick skillet with no-stick cooking spray. Add sausage, zucchini and corn mixture; cook and stir over medium-high heat for 8 minutes or until vegetables are cooked and sausage is heated through.

Stir in black beans, rice, salsa and chili powder. Cook and stir for 5 minutes or until heated through.

Sprinkle with cheese and cilantro (if desired); just before serving.

Mexican Salsa Recipes

If you like a spicy food and want to make the Mexican salsa recipe in your home, then you need to some tips about this recipe. Here you can get the information about best homemade Mexican salsa recipe. There are dozens of different Mexican salsas, but almost all fall into one of three categories: raw salsa, cooked salsa made with fresh ingredients and dried pepper salsa. The beauty of salsa is its adaptability and versatility. At its most basic, salsa contains chopped or pureed tomatoes, chilies, onions, and cilantro, flavored with salt and a squeeze of lime juice. But you can make Mexican salsa with many different combination of fruits and vegetables, chilies and herbs. Never includes vinegar in Mexican Salsa.

Homemade authentic Mexican salsa recipe

Ingredients: ½ medium onion lightly cut, 3 medium tomatoes, ½ capsicum- cut thinly, 3 serrano chilies – cut red chili powder (optional),salt/pepper – to taste, 2 table spoon oil

Method

Take a pot, add 2 tsp oil and add the, capsicum, cut onion and the Serrano chilies. Cook for 1-2 mints, but not son that they become soggy. Then add the cut tomato, some salt and red chili powder and mix everything together. Remove from fire flame and let the mixture cool a little. Finally pulse all together in a mini-grinder or food processor for 2 mints. Do not add water. Make sure that the salsa remains chunky, and do not blend IT into a paste.

Tomato Salsa

Ingredients: 3 fresh tomatoes,1 spicy red or green pepper, ½ red onion, 1 scallion, 3 tbsp olive oil, salt and pepper juice from half a lemon, salt and pepper, coriander leaves, 1 mixing bowl, 1 sharp knife, 1 cutting board, 1 serving bowl, 1 spoon

Method

First cut the tomatoes, cut onion thinly, Deseed and cut the pepper. Wash your hands after cutting to avoid burning your eyes with the juice of the pepper. Then cut the coriander and mix the onion, the green pepper and the coriander with the tomatoes. Squeeze the lemon juice and pour over the vegetables in the bowl. Add the olive oil, salt and pepper. Mix all the ingredients together, until well mixed. Taste the salsa and if necessary add salt and pepper. Place in a serving bowl.

This former Banana Cream Pie brings you back to the old days. "IT's a simple recipe, but delicious. Doing so is a favorite recipe pie crust, flour paste yeast to try this pie crust. Busy hurry or just do not like pie crust, there are some great ready-made crust in the freezer of your grocery store.

OLD FASHION Banana cream pie

2 cups milk
3 egg yolks, save whites for another use
Tablespoon butter 1 teaspoon
1 / 3 cup flour
C. 8.1 teaspoon salt
2 / 3 cup sugar
Teaspoon vanilla 1 teaspoon
2 bananas, sliced
baked crust

Scald milk. At the top of a double boiler pot, combine the flour, salt and sugar. Slowly add hot milk to flour mixture, stirring constantly until smooth. Simmer in a double boiler until smooth and thick, about 15 minutes. Beat egg yolks slightly and add a small amount of mixture hot for them and beat constantly until smooth. Quickly add the egg mixture to double boiler and stir constantly. Cook about 3 minutes. Add butter and vanilla, stir to mix well. Remove top of double boiler from the stove. While the mixture cooled slightly, cut the bananas into the crust. Cover bananas with the filling mixture. Serve with spoonfuls of whipped cream or use egg whites for a meringue pie and make this a banana meringue. Anyway, it's delicious.

Pasta with yeast Cake flour

2 cups flour upward
2 / 3 cup solid shortening
V. 6.8 tbsp water

Cut flour and butter until mixture resembles coarse crumbs. Add water, starting with 6 tablespoons and mix until a stiff dough is formed. Gradually add more water if necessary. Divide dough in half. half a ton of dough about 1/8-inch thick circle. Transfer to a pie dish. Add garnish. Roll out remaining dough in the first half and use over the filling. With fingers, turn the edges of the dough and press to seal a scalloped edge design. Court in the small upper crust to allow steam to escape during cooking. Bake according to cake recipe.

Note: To make a pie crust over pie, divide ingredients in half. Read the instructions above. Set the crust in a greased 9-inch cake. With a fork, make some holes in the bottom and sides of dough to allow air to escape. Otherwise, the crust puffs up. Bake at 350 degrees until golden brown. Come back often and whether ignition, stick fork in the area of inflammation. Cool before filling.

Mexican white cheese sauce or cream cheese is easy to do and so many people like to use for dipping chips or slathering on a plate or another. People of all ages love creamy texture and spicy flavor of this sauce. If you do IT for you and your family want to reduce the level of heat you eat, you can choose from sweet peppers and soft cheese to make their own cheese.

Cheese sauce recipe of Mexico

What you need

  • 2 teaspoons vegetable oil
  • ½ onion, diced
  • 3 cloves garlic, minced
  • ¼ cup butter or margarine
  • ¼ cup flour
  • 2 cups milk
  • 1 teaspoon ground cumin
  • 1 can drained chopped green chiles
  • 1 can of chipotle peppers, drained
  • 1 cup Monterey Jack cheese
  • Salt and pepper to taste

How

Use a medium saucepan over medium heat, add vegetable oil and cook onion, stirring regularly to prevent burning for 5-10 minutes or until translucent. Add garlic, reduce heat to low and heat and simmer for 5 minutes. Set aside until needed.

Then le Roux, while using two quarts saucepan over low heat. Add butter or margarine and allow to melt gently. After melting the butter or margarine, add flour and stir the bowl, while with a whisk.

Increase the heat level care Take this mixture to a slow bubble stirring constantly for 1 minute.

Gradually add a little milk at a time and continue stirring while raising over medium heat. Continue beating for about 5 to 10 minutes, the sauce thickens.

Reduce heat and add the mixture onion and garlic, cumin and pepper, stirring until well blended. Salt and pepper to taste and beat well.

Remove from heat and gradually add the grated cheese. Using the whisk to stir in each loop to add the cheese until melted. Continue to add cheese a handful at a time and stir until mixture is well blended and creamy in appearance.

You can serve immediately with tortilla chips. If you want to keep the sauce hot enough to be immersed in a small crock pot to simmer and cover with lid until ready to serve.
